Roasted Tomato Caprese Toast

Roasted cherry tomatoes are little bursts of intense sweetness and I pretty much put these on anything. You don't even need anything else , but if you want to use of extra bits and pieces you can throw them onto toast with pesto, cheese, meat.. whatever is around.
It's a great way to use crusty bread and too-ripe tomatoes that looks way more impressive than it actually is!  

Roasted Tomato Caprese Toast

Ingredients

  • French bread sliced thinly
  • A handful of cherry tomatoes (can slice in half if some are slightly larger)
  • 4 cloves garlic chopped roughly
  • 2 tbsp balsamic reduction
  • 2 tbsp olive oil
  • Salt & Pepper
  • 1 peach
  • handful of basil
  • handful of arugula / rocket
  • Chunks of fresh mozarella


Lightly brush bread with olive oil and pop in hot oven to toast until golden then remove. These will store in an airtight container for a few days.

Heat oven to hot temp (about 200 celcius) and pop tomatoes in a pan along with olive oil, salt, pepper and garlic.  Bake for about 20 -30 mins or until soft and starting to crisp.

Tear off small chunks of mozarella and pop one on each bit of toast and place pack in oven for a few minutes until it starts to melt. Remove and top with thinly sliced peach, tomatoes, basil, argula and a drizzle of balsamic reduction and olive oil.
