Cookies and Cream Raw Galaxy Slice


These are creamy, rich and best of all actually kinda healthy. I am definitely a fan of sugar and butter in all the right places, but enjoy experimenting with what you can do with nuts and seeds and the like. Aside from the icing, the rest contains no refined sugar. You could perhaps try substituting coconut sugar here.
The marbled 'galaxy' idea looks far more tricky than it actually is and is pretty much the same process that you would've done in primary school waaaay back when marbling paper.



Cookies and Cream Raw Galaxy Slice


Cookie brownie base

  • 2 cups raw almonds
  • 1 1/2 cups coconut flour
  • 2 cups dates soaked in boiling water
  • 1/2 cup Cacao Powder
  • 1/3 cup  coconut oil (melted)
  • 1/2 tsp salt
  • 1 tsp vanilla bean paste

Creamy centre

  • 1 1/2 cups raw cashew nuts, soaked in cold water for an hour or two
  • 3/4 cup coconut milk
  • 1/2 cup agave or maple syrup
  • 1 tsp vanilla bean paste
  • 1/2 cup coconut butter, melted

Galaxy Icing

  • 1 cup icing / confectioners sugar
  • dash of hot water
  • gel food colouring (I used black, magenta and blue)
  • edible silver sprinkes

Whizz together dry ingredients for the base layer, adding coconut oil and dates slowly. Use left over boiling water from dates to reach a good cake-like cosistency. Press into a small tin, refrigerate.
Whizz together ingredients for the cookie centre and pour over the brownie mixture. Pop into the freezer.
For the icing, mix a little hot water into the icing sugar to make a firm white icing with a little movement in it. Drop a few of each colour of icing onto the top and using a toothpick swirl to mix ever so slightly. Remove slice from the freezer, cut into squares and dip one at a time into the icing, swirling across the surface to coat. Sprinkle with silver to complete! Keep in freezer until ready to serve.
